Renowned Nigerian chef and Guinness World Record holder, Hilda Baci, has ignited a fervent debate across the internet by expressing her preference for Nigerian Jollof over its Ghanaian counterpart.
During a recent podcast while in the United Kingdom, Baci didn’t hold back in her comparison, candidly sharing her disappointment with Ghanaian Jollof, labeling it as lacking in flavor.
“Let me tell you, Nigerian Jollof is better than Ghanaian Jollof,” she asserted, citing her personal experiences and even engaging in a cooking competition with a Ghanaian chef. She specifically pointed out what she perceived as a lack of intentional flavor-building in Ghanaian Jollof, contrasting it with Nigerian cooking practices, where she claimed there is a deliberate focus on enhancing flavors.
Baci delved into the nuances, highlighting differences in the preparation methods. She pointed out that Ghanaians tend to rely more on the Jollof paste rather than crafting the Jollof mix from scratch, which, in her opinion, affects the depth of flavor in the dish. Additionally, she mentioned the absence of a smoking technique in Ghanaian Jollof, which she believes contributes to its flavor profile.
Despite her critique, Baci acknowledged Ghana’s strengths, expressing confusion over the ongoing debate between the two nations regarding Jollof, stating, “I don’t know why they (Ghanaians) have been going back and forth with us because you guys have some good things that we’re not dragging with you.”
The chef made it clear that while she favors Nigerian Jollof, she recognizes Ghana’s other culinary delights, urging for a focus on celebrating the unique strengths each country brings to the table without unnecessary rivalry.
